A fresh, light salad featuring crisp cucumbers, tomatoes, feta, and a bright lemon-herb dressing.

Ingredients

  • 3 large cucumbers, sliced or chopped
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted
  • 2 tablespoons fresh dill, chopped
  • For the Dressing:
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the vegetables: Wash and chop the cucumbers, halve the tomatoes, and thinly slice the red onion. Place them in a large bowl.
  2. Add the feta cheese and olives to the bowl with the vegetables.
  3. Make the dressing: In a small jar, combine the olive oil, lemon juice, dried oregano, salt, and pepper. Shake well until mixed.
  4. Pour the dressing over the salad ingredients.
  5. Gently toss the salad to coat everything evenly.
  6. Stir in the fresh dill just before serving.

Notes

  • For best texture, salt the cucumbers lightly and let them sit for 10 minutes before rinsing and draining excess water.
  • You can substitute mint for dill if you prefer a different herb flavor.
  • This salad tastes best when served within an hour of preparation.
