Make flavorful quesadillas using Mediterranean ingredients like feta cheese, spinach, and sun-dried tomatoes inside a warm tortilla.

Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 cup fresh spinach, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup Kalamata olives, sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Tzatziki sauce, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and set aside.
  3. Place one tortilla in the skillet. Sprinkle half of the mozzarella cheese over the tortilla.
  4. Top the cheese with half of the wilted spinach, feta cheese, sun-dried tomatoes, olives, and oregano.
  5. Sprinkle the remaining mozzarella cheese over the fillings.
  6. Place a second tortilla on top of the fillings.
  7. Cook for 3 to 4 minutes per side, pressing down gently with a spatula, until the tortilla is golden brown and the cheese is melted.
  8. Remove the quesadilla from the skillet, slice into wedges, and repeat with the remaining ingredients.
  9. Serve immediately with tzatziki sauce.

Notes

  • For a protein boost, add 1/2 cup of cooked, shredded chicken before adding the top tortilla.
  • You can substitute halloumi cheese for feta if you prefer a firmer texture when melted.
  • Use whole wheat tortillas for a slightly different flavor profile.
