Make a crispy, layered Mexican Pizza at home that tastes just like the fast-food favorite. This recipe focuses on achieving a non-soggy crust.

  • 12 small flour tortillas (about 6 inches)
  • 1 tablespoon vegetable oil
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 (16 ounce) can refried beans, warmed
  • 1 cup enchilada sauce (red)
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes (optional topping)
  • 1/4 cup sliced black olives (optional topping)
  • 1/4 cup sliced green onions (optional topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly brush both sides of the flour tortillas with vegetable oil.
  2. Bake the tortillas directly on the oven rack for 5 to 7 minutes, flipping halfway, until they are crisp. Set aside.
  3. While tortillas bake, cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
  4. Stir in the taco seasoning and water according to package directions. Simmer for 5 minutes until the sauce thickens slightly.
  5. Warm the refried beans in a small saucepan or microwave until spreadable.
  6. To assemble the first layer, place one crispy tortilla on a baking sheet. Spread half of the warm refried beans evenly over the tortilla.
  7. Top the beans with half of the seasoned ground beef. Sprinkle with half of the shredded cheese.
  8. Place the second crispy tortilla on top of the beef layer. Spread the remaining refried beans over this tortilla, followed by the remaining ground beef and cheese.
  9. Pour the red enchilada sauce evenly over the top layer of cheese.
  10. Bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
  11. Remove from the oven. Top immediately with diced tomatoes, black olives, and green onions, if using. Slice into wedges and serve hot.

Notes

  • To prevent sogginess, make sure your refried beans and meat filling are not too wet before layering.
  • You can use an air fryer to crisp the tortillas: cook at 375 degrees Fahrenheit for 3 to 4 minutes per side.
  • For a vegetarian option, substitute the ground beef with an equal amount of black beans seasoned with taco spices.
