  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed very ripe bananas (about 3-4 bananas)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 6-cup mini loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Mix in the mashed bananas until just combined. Do not overmix.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Fold in the chocolate chips, if using.
  7. Divide the batter evenly among the prepared mini loaf pans.
  8. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the loaves cool in the pan for 10 minutes before turning them out onto a wire rack to cool completely.

Notes

  • For the moistest results, use bananas that are heavily spotted or almost black.
  • You can prepare the batter ahead of time and store it in the refrigerator for up to 24 hours before baking.
  • These loaves freeze well once completely cooled; wrap individually in plastic wrap before placing them in a freezer bag.
