1 cup all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon salt
1 large egg yolk
1 tablespoon unsalted butter, cold and cubed
1 teaspoon white vinegar
2 tablespoons dry white wine or water
Vegetable oil, for frying
1 cup whole milk ricotta cheese, drained well
1/4 cup powdered sugar, sifted
1/2 teaspoon vanilla extract
1/4 cup mini chocolate chips or chopped pistachios, for garnish
Instructions
Prepare the dough: In a bowl, mix the flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Add the egg yolk, vinegar, and wine or water. Mix until a dough forms. Knead briefly on a floured surface until smooth. Wrap the dough and chill for at least 30 minutes.
Roll out the dough very thin. Use a 2-inch round cutter to cut circles. Wrap these circles around small metal cannoli tubes or dowels, overlapping slightly. Trim excess dough.
Heat about 2 inches of vegetable oil in a deep pot to 350°F (175°C).
Carefully fry the dough-wrapped tubes for 2-3 minutes per side until golden brown and bubbly. Remove and drain on paper towels. Once cool enough to handle, slide the shells off the tubes.
Prepare the filling: In a bowl, mix the drained ricotta cheese, powdered sugar, and vanilla extract until smooth. Chill the filling for 15 minutes.
Transfer the chilled filling to a piping bag fitted with a star tip. Pipe the filling into both ends of the cooled shells.
Garnish the ends of the filled cannoli bites with mini chocolate chips or chopped pistachios. Serve immediately or within a few hours.
Notes
Drain the ricotta cheese thoroughly in a fine-mesh sieve lined with cheesecloth for at least 4 hours, or overnight, to prevent a watery filling.
To keep shells crisp longer, fill them just before serving.
For a crispier shell, you can add 1/2 teaspoon of cocoa powder to the dry ingredients.
