1 cup good quality extra virgin olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon red pepper flakes (optional)
1/4 cup grated Parmesan cheese
1/4 teaspoon black pepper
Pinch of salt
Instructions
Place the minced garlic into a small serving bowl.
Pour the olive oil over the garlic.
Add the dried oregano, basil, rosemary, and red pepper flakes, if using.
Stir the mixture well to combine the herbs and garlic with the oil.
Let the mixture sit for at least 5 minutes at room temperature to allow the flavors to infuse.
Just before serving, stir in the grated Parmesan cheese, black pepper, and salt.
Serve immediately with crusty bread, focaccia, or sourdough.
Notes
For a balsamic variation, serve 2 tablespoons of balsamic vinegar in a separate small dish alongside the oil dip, or mix 1 tablespoon of balsamic vinegar directly into the oil mixture before adding cheese.
Use fresh garlic for the best flavor.
If you have extra time, let the oil infuse for up to 30 minutes before adding the cheese.
