Make this simple ground turkey casserole entirely in one baking dish for an easy weeknight dinner and minimal cleanup.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10.5 ounce) can cream of mushroom soup (or low-sodium alternative)
  • 1/2 cup milk
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cooked rice or egg noodles
  • 1/2 cup shredded cheddar cheese (optional topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute more until fragrant.
  4. In a large bowl, combine the cooked turkey mixture, cream of mushroom soup, milk, frozen mixed vegetables, and cooked rice or noodles. Mix everything well.
  5. Transfer the mixture to the prepared baking dish, spreading it into an even layer.
  6. Bake for 20 minutes.
  7. If using cheese, sprinkle the shredded cheddar over the top. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • For a lower-fat option, substitute the cream of mushroom soup with plain Greek yogurt mixed with a little broth.
  • You can use any cooked grain like quinoa or farro instead of rice or noodles.
  • Prepare the mixture ahead of time, cover, and refrigerate for up to 24 hours. Add 10 minutes to the initial baking time if baking straight from the refrigerator.
