1 tablespoon olive oil
1 small yellow onion, chopped
2 cloves garlic, minced
1 cup quinoa, rinsed
1 (15-ounce) can chickpeas, rinsed and drained
2 cups vegetable broth
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups fresh spinach
1/4 cup crumbled feta cheese (optional, omit for vegan)
1 tablespoon fresh lemon juice
Instructions
Heat the olive oil in a large pot or deep skillet over medium heat. Add the chopped onion and cook until softened, about 4 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Stir in the rinsed quinoa, chickpeas, vegetable broth, oregano, salt, and pepper. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes, or until all the liquid is absorbed and the quinoa is tender. Do not lift the lid during simmering.
Remove the pot from the heat. Stir in the fresh spinach until it wilts, about 2 minutes.
Stir in the lemon juice and the crumbled feta, if using.
Serve immediately as a complete meal in one pot.
Notes
Rinsing the quinoa removes the bitter saponin coating.
For a vegan version, skip the feta cheese.
You can substitute vegetable broth with water, but the flavor will be less rich.
