4 cups shredded green cabbage
1 cup cooked brown rice
1/2 cup breadcrumbs (or oat flour for gluten-free)
1/4 cup finely chopped onion
2 cloves garlic, minced
1 large egg, lightly beaten (or 1 flax egg for vegan)
2 tablespoons nutritional yeast
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil, for brushing
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 Celsius). Line a baking sheet with parchment paper.
Cook the shredded cabbage in a dry skillet over medium heat until it wilts and most of the moisture evaporates, about 8 to 10 minutes. Squeeze out any remaining excess liquid using a clean kitchen towel.
In a large bowl, combine the dried cabbage, cooked brown rice, breadcrumbs, chopped onion, minced garlic, beaten egg (or flax egg), nutritional yeast, thyme, salt, and pepper. Mix well until the mixture holds together when pressed.
Form the mixture into 6 equal patties, about 3/4 inch thick. Place them on the prepared baking sheet.
Lightly brush the tops and sides of the patties with olive oil.
Bake for 15 minutes. Carefully flip the patties using a thin spatula.
Bake for another 10 to 15 minutes, or until the burgers are golden brown and firm to the touch.
Notes
For a crispier exterior, place the baking sheet on the middle rack and switch to the convection setting for the last 5 minutes of cooking.
If the mixture seems too wet before forming patties, add 1 more tablespoon of breadcrumbs.
Serve on toasted whole wheat buns with lettuce, tomato, and a simple vegan mayonnaise or mustard sauce.
