1 pre-made 9-inch graham cracker crust
8 ounces cream cheese, softened
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup heavy whipping cream, cold
1 cup chopped pecans, toasted
1/2 cup pecan halves for topping
Instructions
In a large bowl, beat the softened cream cheese, granulated sugar, brown sugar, vanilla extract, and salt until the mixture is smooth and creamy.
In a separate, chilled bowl, whip the cold heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until just combined. Do not overmix.
Fold in the 1 cup of chopped toasted pecans.
Spoon the filling evenly into the graham cracker crust.
Arrange the 1/2 cup of pecan halves decoratively on top of the filling.
Cover the pie loosely with plastic wrap and chill in the refrigerator for at least 4 hours, or until firm.
Slice and serve cold.
Notes
Toast the chopped pecans lightly in a dry skillet over medium heat for 3 to 5 minutes until fragrant. Let them cool completely before adding them to the filling.
You can substitute a shortbread crust for the graham cracker crust for a different flavor profile.
Make this pie a day ahead for the best texture and setting time.
