4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 cup heavy cream
1/2 cup prepared basil pesto
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cherry tomatoes, halved
1 cup shredded mozzarella cheese
2 tablespoons fresh basil, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
Pat the chicken breasts dry and place them in the prepared baking dish.
In a medium bowl, whisk together the heavy cream, pesto, garlic powder, salt, and pepper until combined.
Pour the cream mixture evenly over the chicken breasts in the dish.
Scatter the halved cherry tomatoes around the chicken.
Bake for 25 minutes.
Remove the dish from the oven and sprinkle the mozzarella cheese evenly over the chicken and sauce.
Return the dish to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
Garnish with fresh chopped basil before serving.
Notes
Serve this bake over cooked pasta, rice, or with crusty bread to soak up the sauce.
If you prefer a less creamy sauce, substitute half of the heavy cream with chicken broth.
