A simple recipe for hearty breakfast tacos featuring scrambled eggs, seasoned potatoes, and melted cheese, perfect for a quick morning meal.

  • 2 medium potatoes, diced small
  • 1 tablespoon olive oil
  • 4 large eggs
  • 2 tablespoons milk or water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 8 small flour or corn tortillas
  • Optional: 1/4 cup chopped onion

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook, stirring occasionally, until tender and lightly browned, about 10 to 12 minutes. If using onion, add it for the last 3 minutes of cooking the potatoes. Season potatoes with salt and pepper. Remove potatoes from the skillet and set aside.
  2. In a bowl, whisk eggs with milk, salt, and pepper.
  3. Wipe the skillet clean if necessary, or use a new non-stick pan. Pour the egg mixture into the skillet over medium-low heat. Cook, gently pushing the cooked edges toward the center until the eggs are mostly set but still slightly moist.
  4. Return the cooked potatoes to the skillet with the eggs. Sprinkle the cheese over the egg and potato mixture. Cook until the cheese melts, about 1 minute.
  5. Warm the tortillas according to package directions (microwave wrapped in a damp paper towel for 30 seconds, or heat briefly in a dry skillet).
  6. Spoon the potato, egg, and cheese filling into the center of each warm tortilla. Fold or roll to serve immediately.

Notes

  • For faster cooking, use pre-cooked or microwaved diced potatoes.
  • Flour tortillas work well for a softer taco; corn tortillas offer a more traditional Tex Mex flavor.
  • Add a dash of hot sauce or a pinch of chili powder to the eggs for spicy breakfast tacos.
  • You can prepare the potatoes ahead of time and store them in the refrigerator for up to 3 days.
