1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar (for crust)
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup granulated sugar (for filling)
1/4 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
Instructions
Preheat your oven to 350 degrees F. Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Prepare the crust: In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until fully combined. Press the mixture firmly and evenly into the bottom of the prepared pan. Bake for 10 minutes. Let cool slightly.
Prepare the cheesecake layer: In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Add the pumpkin puree, 1/2 cup granulated sugar, brown sugar, pumpkin pie spice, and salt. Mix until just combined.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Do not overmix the batter once the eggs are added.
Pour the cheesecake filling evenly over the cooled crust.
Bake for 30 to 35 minutes, or until the edges are set and the center has only a slight jiggle.
Cool the bars completely on a wire rack. For the cleanest slices, chill the pan in the refrigerator for at least 4 hours, or preferably overnight.
Use the parchment paper overhang to lift the chilled bars from the pan. Cut into 24 squares before serving.
Notes
For easy cutting, run a sharp knife under hot water and wipe dry between each cut.
If you prefer a gingersnap crust, substitute gingersnap crumbs for the graham cracker crumbs.
Make these bars a day ahead; chilling improves texture and sliceability.
