Instructions
Preheat your waffle iron according to the manufacturer’s directions. Lightly brush the plates with melted butter.
In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
In a separate medium bowl, whisk together the buttermilk, pumpkin puree, eggs, 1/4 cup melted butter, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few small lumps are fine for fluffy waffles.
Pour the batter onto the hot waffle iron, using the amount recommended for your specific iron to ensure full coverage without overflowing.
Cook until the waffles are golden brown and crisp, usually 4 to 6 minutes, depending on your iron. Remove carefully.
To make the syrup, melt 4 tablespoons of butter in a small saucepan over medium heat. Cook, swirling occasionally, until the butter foams, then brown bits form at the bottom and it smells nutty (about 3-5 minutes).
Remove the browned butter from the heat and immediately whisk in the 1/2 cup of maple syrup.
Serve the warm pumpkin waffles immediately, drizzled generously with the brown butter maple syrup.
Notes
For extra crispy waffles, let the cooked waffles sit on a wire rack in a 200 degree F oven while you finish the rest of the batter.
If you do not have buttermilk, mix 1 1/2 cups of regular milk with 1 1/2 teaspoons of white vinegar or lemon juice and let it sit for 5 minutes before using.
