A quick, crunchy raw carrot salad made with thin carrot ribbons and a bright sesame-lime dressing. This recipe takes under ten minutes to prepare.

Ingredients

  • 3 large carrots, peeled
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon toasted sesame seeds for garnish

Instructions

  1. Use a vegetable peeler to shave the carrots into thin ribbons. Place the ribbons in a medium bowl.
  2. In a small bowl, whisk together the lime juice, soy sauce, sesame oil, honey or maple syrup, grated ginger, and red pepper flakes until combined.
  3. Pour the dressing over the carrot ribbons.
  4. Toss gently until all the ribbons are evenly coated.
  5. Sprinkle with toasted sesame seeds before serving.

Notes

  • For the best ribbon texture, use a standard vegetable peeler and shave the carrots lengthwise.
  • If you do not have fresh ginger, you can substitute with 1/4 teaspoon ground ginger, but fresh is recommended.
  • This salad works well for meal prep; store the dressing separately and toss just before eating to maintain crunch.
