Prepare this warm, cheesy Reuben Dip in your slow cooker for an easy, crowd-pleasing appetizer that tastes just like the classic sandwich.

Ingredients

  • 1 pound corned beef, cooked and shredded or chopped
  • 1 (16 ounce) container cream cheese, softened
  • 1 cup Swiss cheese, shredded
  • 1 cup sauerkraut, drained well
  • 1/2 cup Thousand Island dressing
  • 2 tablespoons rye bread crumbs (optional, for topping)

Instructions

  1. Place the softened cream cheese into the basin of a small slow cooker.
  2. Add the shredded corned beef, drained sauerkraut, shredded Swiss cheese, and Thousand Island dressing to the slow cooker.
  3. Stir all ingredients together until they are fully combined.
  4. Cover the slow cooker and cook on LOW for 2 to 3 hours, or on HIGH for 1 to 1.5 hours, stirring occasionally until the dip is hot and fully melted.
  5. Once melted, stir one final time. If desired, sprinkle the top with rye bread crumbs during the last 15 minutes of cooking.
  6. Serve hot directly from the slow cooker with rye bread, crackers, or tortilla chips.

Notes

  • Drain the sauerkraut very thoroughly to prevent the dip from becoming watery. Press it between paper towels if necessary.
  • For best results, use high-quality deli corned beef.
  • If you do not have a slow cooker, you can combine all ingredients in an oven-safe dish and bake at 375°F for 20 minutes until hot and bubbly.
