Make this easy, creamy roasted cauliflower soup for a comforting dinner. Roasting the cauliflower and garlic develops a deep, nutty flavor.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 4 cloves garlic, unpeeled
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 medium yellow onion, chopped
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (or substitute with full-fat coconut milk for dairy-free)
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Toss the cauliflower florets and unpeeled garlic cloves with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25 to 30 minutes, until the cauliflower is tender and lightly browned.
  4. While the vegetables roast, heat a large pot or Dutch oven over medium heat. Add a drizzle of olive oil and sauté the chopped onion until soft, about 5 minutes.
  5. Remove the garlic from the oven. Squeeze the soft, roasted garlic pulp from the skins into the pot with the onions.
  6. Add the roasted cauliflower florets, vegetable broth, nutmeg, and cumin to the pot. Bring the mixture to a simmer.
  7. Cook for 10 minutes, allowing the flavors to combine.
  8. Carefully transfer the soup mixture to a blender (or use an immersion blender directly in the pot). Blend until completely smooth and velvety.
  9. Return the soup to the pot if necessary. Stir in the heavy cream. Heat gently until warmed through; do not boil.
  10. Taste and adjust seasoning with salt and pepper before serving.

Notes

  • For a richer flavor, use chicken broth instead of vegetable broth.
  • If you prefer a thicker soup, roast the cauliflower for 5 minutes longer or reduce the amount of broth slightly.
  • This soup freezes well for up to three months. Cool completely before freezing.
