Follow these steps to roast sweet potatoes until they have tender centers and slightly caramelized edges. This guide includes savory, sweet, and spicy flavor options.

  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For Classic Savory: 1 teaspoon dried rosemary
  • For Maple Brown Sugar Glazed: 2 tablespoons maple syrup, 1 tablespoon brown sugar
  • For Spicy Chili Lime: 1 teaspoon chili powder, 1/2 teaspoon cumin, zest of 1 lime

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. Wash and dry the sweet potatoes. You can roast them whole, cut them into 1-inch cubes, or slice them into wedges. Cubes or wedges cook faster and result in more crispy edges.
  3. Place the prepared sweet potatoes in a large bowl. Drizzle with olive oil and sprinkle with salt and pepper. Toss until all pieces are evenly coated.
  4. Divide the potatoes into three equal portions if you plan to make the three variations, or keep them together for one flavor profile.
  5. For Classic Savory: Toss one portion with dried rosemary.
  6. For Maple Brown Sugar Glazed: In a small bowl, mix the maple syrup and brown sugar. Toss this mixture with the second portion of potatoes just before placing them on the baking sheet.
  7. For Spicy Chili Lime: Toss the third portion with chili powder and cumin.
  8. Spread the seasoned potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to promote browning rather than steaming.
  9. Roast for 25 to 35 minutes, flipping the potatoes halfway through the cooking time. The potatoes are done when they are easily pierced with a fork and the edges show light browning and caramelization.
  10. If using the Chili Lime variation, toss the hot potatoes with fresh lime zest immediately after removing them from the oven.
  11. Serve warm as a side dish or add to grain bowls.

Notes

  • For make-ahead preparation, you can chop the potatoes up to 24 hours in advance and store them in an airtight container in the refrigerator before tossing with oil and seasoning.
