Make a comforting Shepherd’s Pie quickly using pre-cooked rotisserie chicken for a fast weeknight dinner.

  • 3 cups cooked, shredded rotisserie chicken
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups prepared mashed potatoes (about 4 large potatoes)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Melt the butter in a large skillet over medium heat. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the flour and cook for 1 minute. Gradually whisk in the chicken broth until the mixture thickens into a gravy.
  4. Stir in the heavy cream, thyme, salt, and pepper. Bring the sauce to a simmer.
  5. Fold in the shredded rotisserie chicken and the frozen peas. Cook until the filling is heated through, about 3 minutes.
  6. Pour the chicken filling evenly into the prepared baking dish.
  7. Spoon the mashed potatoes over the filling. Spread the potatoes evenly with a fork, creating peaks for texture.
  8. If using, sprinkle the shredded cheddar cheese over the potato topping.
  9. Bake for 20 to 25 minutes, or until the filling is bubbly and the potato topping is lightly browned.

Notes

  • For extra flavor in the topping, mix 1 egg yolk and 1 tablespoon of melted butter into your prepared mashed potatoes before spreading them on top.
  • If you prefer a crispier top, place the dish under the broiler for the last 1 to 2 minutes, watching closely to prevent burning.
  • You can substitute frozen mixed vegetables for the carrots, celery, and peas if you need a faster filling preparation.
