Easy Classic Salisbury Steak with Mushroom Gravy

Make tender, juicy ground beef patties smothered in a rich, savory mushroom gravy. This recipe is simple enough for a weeknight dinner.

  • 1.5 lb ground beef (80/20 recommended)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 1/2 small onion, finely minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 oz cremini mushrooms, sliced
  • 1/2 cup chopped yellow onion
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon dried thyme

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, minced onion, salt, pepper, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
  2. Form the mixture into 4 equal oval-shaped patties, about 3/4 inch thick.
  3. Heat the olive oil in a large skillet over medium heat. Brown the patties for 3 to 4 minutes per side until golden brown. Remove the patties from the skillet and set them aside.
  4. Add the butter to the same skillet. Add the sliced mushrooms and chopped onion. Cook until softened, about 5 minutes.
  5. Sprinkle the flour over the mushrooms and onions. Stir constantly for 1 minute to cook out the raw flour taste.
  6. Slowly whisk in the beef broth until smooth. Bring the mixture to a simmer, stirring until the gravy thickens slightly. Stir in the dried thyme.
  7. Return the beef patties to the skillet. Reduce the heat to low, cover the skillet, and let the patties simmer in the gravy for 10 to 15 minutes, or until cooked through and tender.
  8. Serve the Salisbury steaks immediately over mashed potatoes or noodles, spooning plenty of mushroom gravy over the top.

Notes

  • For extra flavor in the patties, substitute half the milk with beef broth.
  • If you prefer a smoother gravy, strain the cooked mushrooms and onions out before adding the patties back to the pan.
  • This recipe works well using a slow cooker; brown the patties first, then place them in the slow cooker with the prepared gravy mixture and cook on low for 4 hours.
