Assemble a satisfying breakfast bowl featuring savory sausage, crispy sweet potatoes, and a tangy maple-Dijon dressing. This recipe works well for quick weekday mornings or weekend brunch.

  • 1 pound breakfast sausage (pork or turkey)
  • 1.5 pounds sweet potatoes, peeled and diced into 1/2 inch cubes
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 4 large eggs (optional)
  • For the Drizzle: 2 tablespoons Dijon mustard
  • For the Drizzle: 1 tablespoon pure maple syrup
  • For the Drizzle: 1 teaspoon apple cider vinegar
  • Optional Toppings: Fresh chives, hot sauce

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper on a baking sheet. Spread them in a single layer.
  3. Roast the sweet potatoes for 20 to 25 minutes, flipping halfway through, until they are tender and slightly browned.
  4. While the potatoes roast, cook the sausage in a large skillet over medium heat, breaking it up as it cooks, until fully browned. Drain off excess grease.
  5. Add the chopped onion and red bell pepper to the skillet with the sausage. Cook until the vegetables soften, about 5 to 7 minutes.
  6. If using eggs, cook them separately to your preference (fried, scrambled, or poached).
  7. Prepare the drizzle by whisking together Dijon mustard, maple syrup, and apple cider vinegar in a small bowl.
  8. To assemble the bowls, divide the sausage and vegetable mixture among four bowls. Top with the roasted sweet potatoes.
  9. Place one cooked egg on top of each bowl, if desired. Drizzle generously with the maple-Dijon sauce and garnish with fresh chives.

Notes

  • For meal prepping, cook all components separately and store them in airtight containers. Reheat the potatoes and sausage mixture, then top with a freshly cooked egg just before serving.
  • If you prefer standard potatoes, substitute white or Yukon gold potatoes for the sweet potatoes; you may need to increase the roasting time by 5 to 10 minutes.
  • Use chicken or apple sausage for a different flavor profile.
