1 pound Italian sausage (sweet or hot), casings removed
1 tablespoon olive oil
1 large yellow onion, chopped
3 cloves garlic, minced
4 cups chicken broth
2 cups water
1 pound russet potatoes, peeled and diced into 1/2-inch pieces
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 cups fresh spinach, roughly chopped
Instructions
Place the Italian sausage in a large pot or Dutch oven over medium heat. Cook, breaking it up with a spoon, until browned. Drain off excess grease.
Add the olive oil, chopped onion, and minced garlic to the pot with the sausage. Cook until the onion softens, about 5 minutes.
Pour in the chicken broth and water. Add the diced potatoes, Italian seasoning, salt, and pepper.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
Remove the pot from the heat. Stir in the heavy cream and Parmesan cheese until the cheese melts and the broth thickens slightly.
Stir in the fresh spinach until it wilts into the soup, about 1 minute.
Taste and adjust salt and pepper if needed before serving hot.
Notes
For a thicker soup, mash about 1 cup of the cooked potatoes against the side of the pot before adding the cream.
You can substitute pork or beef sausage for Italian sausage, but adjust seasonings as needed.
If you prefer a Tuscan soup variation, add 1/2 cup sun-dried tomatoes (drained) along with the broth.
