A classic, savory sausage stuffing recipe that stays moist inside while developing a crispy top layer, perfect for holiday meals.

  • 1 pound bulk pork sausage (mild or spicy)
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1 loaf (1 pound) day-old bread, cut into 1-inch cubes
  • 2 large eggs, lightly beaten
  • 2 cups chicken broth

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish.
  2. Cook the sausage in a large skillet over medium heat, breaking it up as it cooks, until browned. Drain off excess grease and set the sausage aside.
  3. In the same skillet, melt the butter over medium heat. Add the celery and onion. Cook until softened, about 5 to 7 minutes.
  4. Stir in the sage, thyme, rosemary, salt, and pepper. Cook for 1 minute until fragrant.
  5. In a very large bowl, combine the bread cubes, cooked sausage, and the herb and vegetable mixture. Toss gently to combine.
  6. In a separate small bowl, whisk together the eggs and chicken broth. Pour this liquid mixture over the bread and sausage mixture. Toss gently until the bread is evenly moistened. Do not overmix.
  7. Transfer the stuffing mixture to the prepared baking dish.
  8. Bake for 35 to 45 minutes, or until the top is golden brown and crispy and the center is heated through.
  9. Let the stuffing rest for 10 minutes before serving.

Notes

  • For a crispier top, uncover the dish for the last 10 minutes of baking.
  • You can prepare the entire mixture (steps 1 through 5) one day ahead. Cover and refrigerate. Add the liquid ingredients just before baking and add 10 minutes to the baking time if baking cold.
  • Use day-old or slightly stale bread for the best texture; fresh bread can become too mushy.
