4 bone-in or boneless pork chops (about 1 inch thick)
2 tablespoons olive oil
4 cloves garlic, minced
1 large lemon, zested and juiced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound broccoli florets
1 red bell pepper, cut into 1-inch pieces
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easier cleanup.
In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper to create the marinade.
Place the pork chops in a large bowl or directly on the prepared sheet pan. Pour half of the marinade over the pork chops and turn to coat them evenly. Let them sit while you prepare the vegetables.
Toss the broccoli florets and red bell pepper pieces with the remaining half of the marinade on the sheet pan. Spread the vegetables into a single layer around the pork chops.
Place the sheet pan in the preheated oven. Bake for 18 to 22 minutes, or until the pork chops reach an internal temperature of 145 degrees Fahrenheit and the vegetables are tender-crisp.
Remove from the oven and let the pork chops rest for 5 minutes before serving with the roasted vegetables.
Notes
For thicker pork chops (over 1.5 inches), you may need to increase the cooking time by 5 to 8 minutes.
If you do not have fresh lemons, substitute 2 tablespoons of bottled lemon juice, but add 1/2 teaspoon of lemon extract if available for stronger flavor.
You can substitute the vegetables with asparagus or small potatoes, adjusting cook time as needed for denser vegetables.
