Make a quick, fudgy, single-serve protein brownie in the microwave. This recipe yields one high-protein, low-cleanup dessert.

  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon oat flour or almond flour
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon milk (dairy or non-dairy)
  • 1 teaspoon melted coconut oil or butter
  • 1 teaspoon water (or more, adjust consistency)
  • Optional: 1 tablespoon chocolate chips

Instructions

  1. Combine the protein powder, cocoa powder, flour, baking powder, and salt in a microwave-safe mug. Mix dry ingredients well.
  2. Add the maple syrup, milk, melted oil, and water to the mug. Stir until just combined. Do not overmix.
  3. If using, fold in the chocolate chips.
  4. Microwave on high for 45 to 70 seconds. Cooking time varies based on microwave wattage. Start with 45 seconds and check for doneness. The center should look slightly moist but not liquid.
  5. Let the brownie cool in the mug for 2 minutes before eating directly from the mug.

Notes

  • If the brownie seems too dry after microwaving, add another teaspoon of water next time.
  • For a fudgier texture, use slightly less liquid.
  • You can substitute the sweetener with your preferred zero-calorie option, adjusting liquid slightly.
