Make this easy, set-it-and-forget-it Buffalo Chicken Chili in your slow cooker for a spicy and comforting meal perfect for game days or weeknights.

  • 2 lbs boneless, skinless chicken breasts
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (10 ounce) can mild diced green chilies, undrained
  • 1 cup chicken broth
  • 1 cup buffalo wing sauce (medium heat)
  • 1/2 cup plain Greek yogurt or cream cheese, cubed
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Pour the black beans, cannellini beans, diced tomatoes with green chilies, and diced green chilies over the chicken.
  3. In a separate bowl, whisk together the chicken broth, buffalo wing sauce, ranch seasoning mix, garlic powder, and onion powder.
  4. Pour the sauce mixture over the ingredients in the slow cooker.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  6. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  7. Stir in the Greek yogurt or cream cheese until it melts and the chili becomes creamy.
  8. Stir well to combine everything before serving.

Notes

  • For extra spice, add 1/4 teaspoon of cayenne pepper with the dry seasonings.
  • Shred the chicken directly in the slow cooker for maximum flavor absorption.
  • Serve immediately with your favorite toppings like shredded cheddar cheese, a dollop of sour cream, or chopped green onions.
