Make comforting, classic chicken noodle soup with minimal effort using your slow cooker. This set-it-and-forget-it recipe yields tender chicken and a flavorful broth perfect for busy weeknights.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 8 cups low-sodium chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium yellow onion, chopped
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 ounces wide egg noodles
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts or thighs into the bottom of your slow cooker.
  2. Add the chicken broth, carrots, celery, onion, thyme, rosemary, bay leaf, salt, and pepper over the chicken.
  3. Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  4. Remove the chicken from the slow cooker and place it on a cutting board. Use two forks to shred the chicken. Discard the bay leaf.
  5. Return the shredded chicken to the slow cooker.
  6. Increase the slow cooker setting to high, if necessary. Stir in the egg noodles. Cook, uncovered, for 15 to 20 minutes, or until the noodles are tender. Check the noodles frequently to prevent overcooking.
  7. Taste the soup and adjust salt and pepper as needed.
  8. Ladle the soup into bowls and garnish each serving with fresh parsley before serving.

Notes

  • If you prefer a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water to create a slurry. Stir the slurry into the soup during the last 10 minutes of cooking.
  • For quicker prep, use a store-bought rotisserie chicken. Shred the meat and add it back to the soup during the last 30 minutes of cooking.
  • Add the noodles only during the last 20 minutes of cooking to keep them from becoming mushy.
