A moist banana bread recipe featuring the classic cinnamon and slight tang of a Snickerdoodle cookie, finished with a cinnamon-sugar topping.

  • 3 large very ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon ground cinnamon (for the batter)
  • 1/2 cup granulated sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, 3/4 cup sugar, egg, and vanilla extract until combined.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, cream of tartar, and 1/2 teaspoon cinnamon.
  4. Add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix the batter.
  5. Pour the batter into the prepared loaf pan.
  6. In a small bowl, mix the 1/2 cup sugar and 1 tablespoon cinnamon for the topping. Sprinkle this mixture evenly over the top of the batter.
  7. Bake for 50 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • Use bananas that are heavily spotted or almost black for the best flavor and moisture.
  • Cream of tartar is necessary to achieve the slight tang characteristic of Snickerdoodles.
  • If the topping begins to brown too quickly during baking, loosely tent the loaf with aluminum foil for the remainder of the cooking time.
