1 whole chicken (about 4 lbs)
4 tablespoons unsalted butter, softened
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon olive oil
Instructions
Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top of the sheet.
Place the chicken breast-side down on a cutting board. Using strong kitchen shears, cut along both sides of the backbone, removing the backbone completely.
Flip the chicken over. Press down firmly on the center of the breastbone until you hear a crack and the chicken lies flat. This is the butterfly technique.
In a small bowl, mix the softened butter, minced garlic, rosemary, thyme, salt, pepper, and paprika until combined.
Gently separate the skin from the breast meat, being careful not to tear the skin. Rub half of the garlic herb butter directly onto the breast meat under the skin. Rub the remaining butter all over the outside of the chicken.
Drizzle the olive oil over the chicken. Place the spatchcocked chicken skin-side up on the wire rack on the prepared baking sheet.
Roast for 40 to 50 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
Remove the chicken from the oven and let it rest on the rack for 10 minutes before carving.
Notes
Save the removed backbone to make chicken stock later.
For extra crispy skin, place the chicken under the broiler for the last 1-2 minutes, watching closely to prevent burning.
If you want to roast vegetables, place them directly on the baking sheet around the wire rack before roasting.
