1 pound sirloin steak, cut into 1-inch cubes
1 large sweet potato, peeled and cubed (about 1 inch)
1 tablespoon olive oil, plus more for drizzling
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 ripe avocado
1/2 cup fresh cilantro leaves
2 tablespoons lime juice
2 tablespoons water (or more, for thinning)
1/4 teaspoon ground cumin
4 cups mixed greens (optional, for serving base)
Instructions
Preheat your oven to 400°F (200°C). Toss the sweet potato cubes with 1 teaspoon of olive oil, salt, and pepper. Spread them on a baking sheet.
Roast the sweet potatoes for 20 to 25 minutes, flipping halfway, until tender and slightly browned.
While potatoes roast, prepare the steak. Pat the steak cubes dry. Toss them in a bowl with the remaining olive oil, salt, pepper, and garlic powder.
Heat a large skillet over medium-high heat. Add the seasoned steak cubes in a single layer, avoiding crowding the pan.
Sear the steak for 3 to 4 minutes per side for medium-rare, adjusting time for your preferred doneness. Remove the steak from the skillet and set aside.
Prepare the drizzle: Combine the avocado, cilantro, lime juice, water, and cumin in a food processor or blender. Blend until completely smooth, adding more water one teaspoon at a time until you reach a pourable consistency.
Assemble the bowls: Divide the mixed greens (if using) among four bowls. Top with roasted sweet potatoes and seared steak cubes.
Drizzle generously with the avocado-cilantro sauce before serving.
Notes
For meal prepping, store the steak, potatoes, and sauce separately. Assemble just before eating to maintain texture.
You can substitute the sirloin steak with flank steak or skirt steak.
If you prefer mashed sweet potatoes, steam or boil the cubes until very soft, then mash with a pinch of salt and a splash of milk or water.
