Prepare a quick and flavorful Korean-inspired chicken dish featuring a sticky, sweet, and spicy glaze made with gochujang.

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1/4 cup gochujang (Korean chili paste)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup water
  • 1 teaspoon cornstarch

Instructions

  1. Toss the cut chicken pieces with salt and pepper.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In a small bowl, whisk together the gochujang, honey, soy sauce, rice vinegar, brown sugar, minced garlic, and grated ginger.
  4. Pour the sauce mixture into the same skillet. Bring to a simmer over medium heat.
  5. In a separate small bowl, whisk the cornstarch with the water to create a slurry. Pour the slurry into the simmering sauce, stirring constantly until the sauce thickens, about 1 minute.
  6. Return the cooked chicken to the skillet. Toss the chicken pieces until they are fully coated in the sticky glaze.
  7. Serve immediately over rice or with your choice of side dish.

Notes

  • For extra heat, add 1/2 teaspoon of gochugaru (Korean chili flakes) to the sauce mixture.
  • Garnish with toasted sesame seeds and sliced green onions before serving for added texture and color.
  • You can substitute chicken thighs with chicken breasts, but thighs stay more moist during cooking.
