Make fudgy, chewy strawberry blondies using just one bowl for simple preparation and minimal cleanup.

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until smooth.
  3. Add the egg and vanilla extract to the bowl. Whisk until the mixture is fully combined and slightly lighter in color.
  4. Add the flour and salt directly into the wet ingredients in the same bowl. Use a spatula to gently fold the dry ingredients into the wet until just combined. Do not overmix.
  5. Fold in the chopped fresh strawberries until they are evenly distributed throughout the batter.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25 to 30 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  8. Let the blondies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang and cutting them into squares.

Notes

  • For a chewier texture, slightly underbake them by about 2 minutes.
  • If using frozen strawberries, do not thaw them first; fold them in directly.
  • You can add 1/2 cup of white chocolate chips along with the strawberries for extra sweetness.
