3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons melted butter, plus more for the griddle
1 teaspoon vanilla extract
1 cup fresh strawberries, sliced
4 ounces cream cheese, softened
1/4 cup powdered sugar
1 tablespoon milk (for glaze)
Instructions
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine for fluffy pancakes.
Gently fold in the sliced strawberries.
Heat a lightly oiled griddle or large non-stick pan over medium heat. Pour 1/4 cup of batter onto the griddle for each pancake.
Cook for 2-3 minutes per side, until golden brown and bubbles appear on the surface. Flip and cook the other side.
While pancakes cook, prepare the glaze: Beat the softened cream cheese until smooth. Gradually beat in the powdered sugar and 1 tablespoon of milk until the glaze is smooth and drizzly.
Stack the pancakes and drizzle generously with the cream cheese glaze before serving.
Notes
For extra fluffiness, separate the egg. Beat the egg white until stiff peaks form, then gently fold it into the batter last.
Use buttermilk instead of regular milk for a tangier flavor.
If you prefer a shortcake style, top with whipped cream instead of the cream cheese glaze.
