8 slices thick-cut brioche bread
8 ounces cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup milk
1/4 teaspoon ground cinnamon
1 cup mixed berries (strawberries, blueberries)
2 tablespoons butter, for frying
Powdered sugar, for dusting
Instructions
In a small bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth.
Spread half of the cream cheese mixture evenly over four slices of bread. Top each with a layer of mixed berries, then spread the remaining cream cheese mixture on top of the berries. Place the remaining four slices of bread on top to form four sandwiches.
In a shallow dish, whisk together the egg, milk, and cinnamon until combined.
Dip each sandwich into the egg mixture, coating both sides completely. Do not let it soak too long.
Melt butter in a large skillet over medium heat.
Cook the stuffed sandwiches for 3 to 4 minutes per side, until golden brown and the center is warm and creamy. You may need to work in batches.
Slice the stuffed French toast in half diagonally. Dust generously with powdered sugar before serving.
Notes
Use thick bread like brioche or challah for the best structure.
You can prepare the sandwiches ahead of time and refrigerate them for up to 4 hours before cooking.
For a richer flavor, substitute half the milk with heavy cream in the egg mixture.
