Follow this simple recipe to bake a moist, buttery, and nutty pecan quick bread. This Southern classic is perfect for brunch, dessert, or as a homemade gift.

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup toasted pecans, roughly chopped (plus extra for topping)

Instructions

  1. Preheat your oven to 350 degrees F. Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this dry mixture aside.
  3. In a large bowl, cream the softened butter and sugar together with an electric mixer until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the flour mixture. Mix only until just combined; do not overmix.
  6. Gently fold in the 1 cup of chopped toasted pecans.
  7. Pour the batter into the prepared loaf pan. Sprinkle a few extra pecans over the top if desired.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before carefully turning it out onto a wire rack to cool completely.

Notes

  • To toast pecans: Spread them in a single layer on a dry skillet over medium heat. Cook for 5 to 7 minutes, stirring often, until fragrant. Watch closely to prevent burning.
  • For a simple glaze, mix 1/2 cup powdered sugar with 2 tablespoons milk and 1/4 teaspoon vanilla extract. Drizzle over the cooled bread.
  • This bread freezes well. Wrap tightly in plastic wrap and then foil.
