1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1/2 cup pineapple juice
1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon grated fresh ginger
1 clove garlic, minced
1/2 cup diced fresh or canned pineapple (drained if canned)
1 tablespoon cornstarch
2 tablespoons cold water
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Instructions
In a small bowl, whisk together the pineapple juice, sweet chili sauce, soy sauce, brown sugar, ginger, and garlic. Set aside.
In a separate small bowl, mix the cornstarch and cold water to create a slurry. Set aside.
Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
Pour the reserved sauce mixture into the hot skillet. Bring to a simmer.
Whisk the cornstarch slurry again and slowly pour it into the simmering sauce, stirring constantly until the sauce thickens, about 1 minute.
Add the diced pineapple to the thickened sauce and cook for 1 minute.
Return the cooked shrimp to the skillet. Toss gently to coat the shrimp completely with the sauce. Cook for 1 minute until the shrimp are heated through.
Remove from heat. Garnish with fresh cilantro and serve immediately with lime wedges.
Notes
Serve this dish over steamed white rice or with lo mein noodles to soak up the extra sauce.
For an air fryer option, toss the shrimp with a light coating of oil and cook at 380°F for 6-8 minutes, then toss with the prepared sauce.
If you prefer less spice, reduce the amount of sweet chili sauce slightly.
