1 cup all-purpose flour
1 cup yellow cornmeal
1/2 cup packed light brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup cooked and mashed sweet potato (about 1 large potato)
1/2 cup buttermilk
1/4 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
For the Glaze: 1/4 cup unsalted butter, melted; 2 tablespoons honey; 2 tablespoons brown sugar
Instructions
Preheat your oven to 375 degrees F. Grease and flour an 8×8 inch baking pan.
In a large bowl, whisk together the flour, cornmeal, brown sugar, baking powder, and salt.
In a separate medium bowl, combine the mashed sweet potato, buttermilk, vegetable oil, eggs, and vanilla extract. Mix until just combined.
Pour the wet ingredients into the dry ingredients. Stir gently until you have a smooth batter; do not overmix.
Pour the batter into the prepared baking pan.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
While the cornbread bakes, prepare the glaze: In a small saucepan over low heat, melt the butter. Stir in the honey and brown sugar until smooth. Remove from heat.
As soon as the cornbread comes out of the oven, immediately brush the warm honey butter glaze evenly over the top.
Let the cornbread cool in the pan for 10 minutes before slicing and serving.
Notes
You can substitute regular milk for buttermilk if needed, but buttermilk helps create a more tender crumb.
To cook the sweet potato, you can bake or microwave it until soft before mashing.
This cornbread freezes well once cooled and stored in an airtight container.
