Prepare a quick and flavorful Thai-style chicken stir-fry featuring a balance of sweet and spicy sauce.

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1-3 teaspoons chili garlic sauce (adjust to your spice preference)
  • 1 teaspoon grated fresh ginger
  • 1/4 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/4 cup fresh Thai basil leaves (or regular basil if unavailable)
  • Cooked rice, for serving

Instructions

  1. In a small bowl, whisk together the soy sauce, fish sauce, brown sugar, rice vinegar, chili garlic sauce, and ginger. Set the sauce aside.
  2. In a separate small bowl, mix the cornstarch and water to create a slurry. Set aside.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. Add the minced garlic and sliced bell pepper to the skillet. Stir-fry for 2 minutes until fragrant. Add the broccoli florets and cook for another 3 minutes until slightly tender-crisp.
  5. Return the cooked chicken to the skillet. Pour the prepared sauce mixture over the chicken and vegetables. Bring the sauce to a simmer.
  6. Stir the cornstarch slurry again and pour it into the simmering sauce. Stir constantly until the sauce thickens, about 1 minute.
  7. Remove the skillet from the heat. Stir in the fresh basil leaves.
  8. Serve the sweet spicy Thai chicken immediately over cooked rice.

Notes

  • For extra heat, include one finely chopped bird’s eye chili with the garlic.
  • If you prefer a sweeter profile, increase the brown sugar by one tablespoon.
  • You can substitute chicken thighs for breasts for a richer flavor.
