12 cups Chex cereal (mix of Rice and Corn)
1 cup (2 sticks) unsalted butter
2 cups packed light brown sugar
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon salt
1 cup pecan halves, lightly salted (optional)
Instructions
Preheat your oven to 250 degrees F. Line two large baking sheets with parchment paper.
In a large bowl, combine the Chex cereal and pecans, if using. Set aside.
In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture reaches a full rolling boil. Boil without stirring for exactly one minute.
Remove the saucepan from the heat. Quickly stir in the vanilla extract and baking soda. The mixture will foam up.
Pour the toffee mixture evenly over the cereal mixture. Gently fold everything together until the cereal is completely coated. Work quickly.
Spread the coated cereal mixture in a single layer onto the prepared baking sheets.
Bake for 45 minutes, stirring every 15 minutes to prevent burning and ensure even coating.
Remove from the oven and let the mix cool completely on the sheets before breaking it apart. Store in an airtight container.
Notes
For extra flavor, you can add 1 cup of chocolate chips or M&Ms after the mix has cooled for 15 minutes.
If you prefer a stronger salty flavor, use salted butter in the toffee base.
This mix stays fresh and crunchy for up to one week when stored properly.
