Lemon Garlic Tortellini with Roasted Summer Vegetables

A simple, light pasta dish combining cheese tortellini with roasted zucchini, cherry tomatoes, and fresh basil, finished with a lemon garlic sauce.

  • 1 (16 ounce) package cheese tortellini
  • 2 medium zucchini, chopped
  • 1 pint cherry tomatoes
  • 1 red bell pepper, chopped
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 2 tablespoons fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the zucchini, cherry tomatoes, and bell pepper with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
  3. Roast the vegetables for 15 to 20 minutes, or until tender and slightly browned.
  4. While the vegetables roast, cook the tortellini according to package directions until al dente. Drain and set aside.
  5. In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  6. Pour in the vegetable broth and lemon juice. Bring to a simmer and cook for 2 minutes, scraping up any bits from the bottom of the pan.
  7. Add the cooked tortellini and the roasted vegetables to the skillet. Toss gently to coat.
  8. Remove the skillet from the heat. Stir in the Parmesan cheese and fresh basil.
  9. Taste and adjust seasoning with more salt and pepper if needed. Serve immediately.

Notes

  • You can substitute store-bought pesto for the lemon garlic sauce for a different flavor profile.
  • If you prefer a colder dish, chill the mixture after tossing and serve it as a pasta salad.
  • Use any seasonal summer vegetable you have on hand, such as corn kernels or yellow squash.
