Make this rich, creamy, no-bake turtle cheesecake featuring a fudgy brownie base, caramel swirl, and toasted pecans. It is a showstopping dessert that requires no oven time.

Ingredients

Scale
  • 1 package (18.4 ounces) fudge brownie mix, plus ingredients listed on box
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup caramel sauce, plus extra for topping
  • 1 cup chopped pecans, toasted
  • 4 ounces semi-sweet chocolate, melted

Instructions

  1. Prepare the brownie layer according to package directions, using a 9-inch springform pan lined with parchment paper. Bake and let cool completely.
  2. In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar and vanilla extract until combined.
  3. In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  4. Gently fold in 1/4 cup of caramel sauce, creating light swirls. Do not overmix.
  5. Spread the cheesecake filling evenly over the cooled brownie layer in the springform pan.
  6. Drizzle the top with the remaining caramel sauce and the melted chocolate. Use a knife to create a light swirl pattern.
  7. Sprinkle the toasted pecans over the top layer.
  8. Cover the pan loosely and refrigerate for at least 6 hours, or preferably overnight, until the cheesecake is firm.
  9. Before serving, carefully release the springform side. Slice and serve cold.

Notes

  • Toast pecans in a dry skillet over medium heat for 3 to 5 minutes, stirring constantly, until fragrant.
  • For cleaner slices, run a sharp knife under hot water and wipe dry between each cut.
  • You can substitute store-bought fudge brownies for the mix if you prefer a faster method.
