Make fluffy, cheesy twice baked potatoes filled with bacon, sour cream, and cheddar cheese. This recipe bakes the potatoes twice for a perfect texture.

  • 4 large Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup crumbled cooked bacon
  • 2 tablespoons chopped fresh chives or green onions

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Pierce each potato several times with a fork. Rub the potatoes lightly with olive oil and sprinkle with salt and pepper.
  2. Bake the potatoes directly on the oven rack for 50 to 60 minutes, or until the skins are crisp and the insides are tender. Remove from the oven and let them cool slightly until you can handle them.
  3. Reduce the oven temperature to 375 degrees Fahrenheit. Line a baking sheet with foil.
  4. Slice each potato in half lengthwise. Carefully scoop out the inside flesh into a large bowl, leaving about a quarter-inch shell intact.
  5. Add the softened butter, sour cream, milk, half of the cheddar cheese, bacon, and chives to the potato flesh. Mash everything together until smooth and creamy.
  6. Spoon the filling mixture back into the potato shells, mounding it slightly.
  7. Top each filled potato with the remaining cheddar cheese.
  8. Return the stuffed potatoes to the baking sheet and bake for an additional 15 to 20 minutes, or until the filling is heated through and the cheese is melted and lightly browned.
  9. Serve immediately.

Notes

  • For extra crispy skins, you can brush the outside of the potatoes with a little melted butter before the first bake.
  • If you prefer a smoother filling, use a potato ricer instead of mashing by hand.
  • You can prepare the filling a day ahead and store it in the refrigerator. Add 5 to 10 minutes to the final baking time if baking cold filling.
