2 tablespoons olive oil
1 large yellow onion, chopped
4 cups chopped fresh celery (about 1 large bunch)
2 medium Yukon Gold potatoes, peeled and diced
4 cups vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup raw cashews, soaked in hot water for 15 minutes (optional, for creaminess)
1/4 cup water (if using cashews)
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and cook until soft, about 5 minutes.
Add the chopped celery and diced potatoes to the pot. Cook, stirring occasionally, for 5 minutes.
Pour in the vegetable broth. Add the salt and pepper. Bring the mixture to a boil, then reduce heat and simmer, covered, for 15 to 20 minutes, or until the potatoes and celery are very tender.
If using cashews, drain them and place them in a small blender with 1/4 cup of fresh water. Blend until completely smooth to create a cream base.
Carefully transfer the soup mixture to a standard blender or use an immersion blender directly in the pot. Blend until the soup is completely smooth and velvety.
Return the soup to the pot if you used a standard blender. Stir in the cashew cream base, if using. Heat through gently for 2 minutes. Do not boil after adding the cashew cream.
Taste and adjust seasoning if needed before serving.
Notes
For a vegan version, use vegetable broth and the optional cashew cream for richness.
For a non-vegan, richer flavor, substitute 1/2 cup of heavy cream for the cashew cream in the final step.
If you have excess celery, this soup is a great way to use it up.
