Make the flavor of classic stuffed peppers in a quick, easy one-pan skillet meal.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked white rice
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  2. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Stir in chopped green and red bell peppers. Cook for 5 minutes until slightly tender.
  4. Pour in tomato sauce, diced tomatoes (with juice), beef broth, oregano, basil, salt, and pepper. Bring the mixture to a simmer.
  5. Stir in the uncooked rice. Cover the skillet and reduce heat to low. Cook for 15 to 20 minutes, or until the rice is tender and liquid is absorbed. Do not lift the lid during this time.
  6. Remove the skillet from the heat. Let it stand, covered, for 5 minutes.
  7. Fluff the mixture with a fork. If using, sprinkle cheddar cheese over the top and cover briefly until the cheese melts.

Notes

  • For a lower fat option, substitute ground turkey for ground beef.
  • To make this a low carb version, omit the rice and add 1 cup of cauliflower rice during the last 5 minutes of cooking.
  • You can use any color of bell pepper you prefer.
