1 cup short-grain white rice (Arborio or sushi rice works well)
1 (13.5 oz) can full-fat coconut milk
1 (13.5 oz) can light coconut milk
1 cup water
1/2 cup granulated sugar (adjust to taste)
1/4 teaspoon salt
1 teaspoon vanilla extract
Zest of 1 lime
1/4 cup shredded unsweetened coconut, for topping
Instructions
Rinse the rice under cold water until the water runs clear. Drain well.
Combine the rinsed rice, full-fat coconut milk, light coconut milk, and water in a medium saucepan.
Bring the mixture to a gentle simmer over medium heat, stirring occasionally to prevent sticking.
Once simmering, reduce the heat to low. Stir in the sugar and salt.
Cook uncovered for 40 to 50 minutes, stirring every 5 to 7 minutes. The pudding is done when the rice is tender and the mixture has thickened to your desired creamy consistency. If it becomes too thick, add a splash of water or plant milk.
Remove the saucepan from the heat. Stir in the vanilla extract.
Let the pudding cool slightly for 10 minutes before serving. It will thicken more as it cools.
While the pudding cools, toast the shredded coconut in a dry skillet over medium-low heat until golden brown, watching carefully to prevent burning.
Serve the warm or chilled pudding topped with the toasted coconut flakes and a sprinkle of fresh lime zest.
Notes
For an extra thick pudding, use only 1/2 cup of water initially and add more liquid only if necessary during cooking.
You can substitute maple syrup for granulated sugar, adjusting the amount to 1/3 cup for sweetness.
This pudding tastes best when served warm or at room temperature.
