6 large flour tortillas
2 tablespoons olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
2 (15 ounce) cans black beans, rinsed and drained
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked white rice
1/4 cup chopped fresh cilantro
1 tablespoon lime juice
1 cup shredded Monterey Jack cheese
Instructions
Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
Add garlic, cumin, chili powder, salt, and pepper to the skillet. Cook for 1 minute until fragrant.
Stir in the rinsed black beans. Cook for 5 minutes, stirring occasionally, until heated through. Mash about one-third of the beans with a fork for texture. Remove from heat.
In a separate small bowl, combine the cooked rice, chopped cilantro, and lime juice.
Warm the flour tortillas according to package directions (microwave or dry skillet work well).
To assemble each burrito, place a tortilla on a flat surface. Spoon one-sixth of the bean mixture down the center. Top the beans with some cilantro-lime rice and sprinkle with shredded cheese.
Fold in the sides of the tortilla, then roll tightly from the bottom up to seal the burrito.
Serve immediately, or wrap individually in foil for later use.
Notes
For a crispier exterior, place assembled burritos seam-side down in a dry, hot skillet for 1-2 minutes per side until golden brown.
You can prepare the bean filling up to three days ahead of time and store it in the refrigerator.
For freezer storage, wrap uncooked or lightly pan-fried burritos tightly in plastic wrap followed by aluminum foil. Thaw overnight and reheat in the oven or microwave.
