Prepare three distinct types of vegetarian quesadillas: Black Bean & Corn, Spinach & Feta, and Loaded Mushroom & Pepper, using a simple stovetop method for a crispy finish.

  • 8 large flour tortillas
  • 2 cups shredded Monterey Jack cheese (or preferred melting cheese)
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup frozen or fresh corn kernels
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1 cup sliced mushrooms
  • 1/2 cup sliced bell peppers (mixed colors)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Prepare the fillings: For the Black Bean & Corn, mix beans, corn, 1/4 teaspoon chili powder, and a pinch of cumin. For the Spinach & Feta, combine spinach, feta, and a pinch of salt. For the Mushroom & Pepper, sauté mushrooms and peppers in olive oil until soft, then mix with remaining chili powder and cumin.
  2. Assemble the quesadillas: Lay one tortilla flat. Sprinkle a thin, even layer of shredded cheese over half of the tortilla. Spoon your chosen filling over the cheese. Sprinkle a little more cheese over the filling. Fold the empty half of the tortilla over the filling to create a half-moon shape.
  3. Cook the quesadillas: Heat a large, dry skillet or griddle over medium heat. Place one assembled quesadilla in the hot skillet. Cook for 3 to 4 minutes per side, pressing down gently with a spatula, until the tortilla is golden brown and the cheese is fully melted.
  4. Repeat the cooking process for the remaining quesadillas, adding a small amount of oil to the pan if needed for browning.
  5. Slice each cooked quesadilla into wedges and serve immediately with your preferred dips.

Notes

  • For extra crispiness, cook the quesadillas slightly longer over medium-low heat to dry out the tortilla surface more thoroughly.
  • If you prefer an oven method, assemble the quesadillas, place them on a baking sheet, brush lightly with oil, and bake at 400°F (200°C) for 10 to 12 minutes, flipping halfway through.
  • Serve with salsa, guacamole, or plain Greek yogurt as a sour cream substitute.
