- 15 ounces whole milk ricotta cheese, drained
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup walnuts
- 3 tablespoons hot honey (or regular honey with a pinch of red pepper flakes)
- Drain excess liquid from the ricotta cheese using a fine-mesh sieve for at least 15 minutes.
- Place the drained ricotta, olive oil, lemon juice, salt, and pepper into a food processor.
- Process the mixture until it is completely smooth and light, about 2 to 3 minutes, scraping down the sides as needed.
- While the dip processes, toast the walnuts in a dry skillet over medium heat for 3 to 5 minutes until fragrant. Let them cool slightly.
- Transfer the whipped ricotta to a shallow serving bowl and spread it evenly.
- Drizzle the hot honey over the top of the dip.
- Sprinkle the toasted walnuts over the honey.
