Prepare this refreshing, protein-rich white bean salad in under 20 minutes. It is a simple, healthy dish perfect for lunch or a side.

  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Combine the rinsed cannellini beans, chopped cucumber, red onion, and parsley in a medium bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the bean mixture.
  4. Gently toss all ingredients until the beans and vegetables are evenly coated.
  5. Serve immediately, or chill for 15 minutes to allow flavors to meld.

Notes

  • This salad tastes better if you let it rest in the refrigerator for at least 30 minutes before serving.
  • You can substitute cannellini beans with great northern beans or chickpeas.
  • For added flavor, add 1/4 cup of crumbled feta cheese (omit for vegan).
