Creamy White Chicken Enchiladas with Green Chiles

Make easy, creamy white chicken enchiladas using a simple white sauce and green chiles for a satisfying weeknight dinner.

  • 2 cups cooked, shredded chicken
  • 10 flour tortillas (8-inch)
  • 1 tablespoon olive oil
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese, divided
  • 1/2 cup sour cream
  • 1 (4 ounce) can diced green chiles, undrained
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a medium saucepan, heat the olive oil over medium heat. Whisk in the flour and cook for one minute, stirring constantly.
  3. Gradually whisk in the chicken broth until smooth. Bring the mixture to a simmer, stirring until the sauce thickens, about 5 minutes.
  4. Reduce the heat to low. Stir in the heavy cream, 1/2 cup of the Monterey Jack cheese, sour cream, green chiles, cumin, and garlic powder. Season with salt and pepper. Stir until the cheese melts and the sauce is smooth.
  5. In a small bowl, combine the shredded chicken with about 1/2 cup of the white sauce.
  6. Warm the tortillas briefly in the microwave or a dry skillet to make them pliable.
  7. Spoon a small amount of sauce on the bottom of the prepared baking dish. Dip each tortilla briefly into the remaining white sauce to coat lightly.
  8. Fill each tortilla with a portion of the chicken mixture. Roll up the tortillas and place them seam-side down in the baking dish.
  9. Pour the remaining white sauce evenly over the rolled tortillas. Sprinkle the remaining 1/2 cup of Monterey Jack cheese over the top.
  10. Bake for 20 to 25 minutes, or until the sauce is bubbly and the cheese is melted and lightly golden.

Notes

  • If you prefer a thinner sauce, add a little more chicken broth until you reach your desired consistency.
  • You can use pre-cooked rotisserie chicken to save preparation time.
  • For extra flavor, lightly sauté a diced onion in the oil before adding the flour for the roux.
